All senses aboard - how does tasting work?

Taste receptors in more than 10,000 taste buds on the tongue react to sweet, sour, salty, bitter and umami, which means spicy or savory. But it's in the brain that we decide whether to swallow what's in our mouths or not. How do we taste in the first place?
